Artichoke cream with almonds
Cream of potatoes and artichoke hearts served with smoked almonds and parsley. So creamy that it melts in your mouth! Excellent with white wine. try also this strawberry cheesecake slice recipe too.
Ingredients

100 g of floury potatoes
240g canned artichoke hearts, drained
2 tablespoons of olive oil
6 dl of vegetable broth
salt
pepper
2 tablespoons of smoked almonds
4 sprigs of parsley

Finely chop the potatoes and artichokes. Fry them in oil. Add the broth and simmer for approx. 20 minutes. Blend with an immersion blender. Season with salt and pepper. Chop the almonds. Remove the parsley leaves from the stems. Spread the chopped almonds and parsley leaves over the cream and serve immediately.
